Find joy in the kitchen can come from many things. The first wave of chocolate on a newly opened bag of chocolate chips. The joy on the faces of a child when they can break the egg into the container itself. The delicious smell that fills every nook and corner of your home as your creation comes to life cooking in the oven. The smiles on the faces of friends and family when you bring this special dessert on the table. But sometimes the more joy simply may come from the fun and creative names of the agreements baking. These two recipes a smile on my face, only because of their names. I hope they do the same for you.
Happy Day Cake
1 cup + 2 tablespoons tablespoons cake flour
Salt 1 / 2 teaspoon
1 1 / 2 c. tea baking powder
3 / 4 cup sugar
Shortening 1 / 4 cup
Milk 1 / 2 cup
1 / 2 teaspoon vanilla
1 egg
In a medium bowl, sift the cake flour, salt, yeast and sugar. Add butter, milk and vanilla. With an electric mixer, beat the mixture for 2 minutes. Add eggs and beat mixture for an additional period of one minute. Grease and flour 8-inch cake. Pour into prepared pan. Bake in Bake at 375 degrees for 25 minutes. Frost with your favorite frosting (chocolate in our house) or top with strawberries and whipped cream.
Cloud Nine Butterscotch Squares Scots
Butter 1 / 2 cup softened
1 package (3 3 / 4 ounces) instant butterscotch pudding
2 eggs
1 teaspoon of vanilla extract tea
1 cup flour
Milk 1 / 2 cup
1 cup quick cooking oats
1 cup sweet chocolate chips
In a large bowl, beat butter until creamy. Add in the pudding and mix well. Add eggs and vanilla. Add alternately with milk and flour. Mix well. Add the oatmeal and chocolate chips. Put the mixture into a 9 x 13-inch oven. Bake in oven at 350 degrees for 20 minutes. Cool and then frost with the following.
Chocolate Frosting
6 tablespoons butter
6 tablespoons milk
1 1 / 2 cups sugar
1 / 2 cup chocolate chips
In a small saucepan over medium heat, combine butter, milk and sugar. Bring to the boil heavy. Let the mixture boil rapidly for 30 seconds. Take the mixture in the heat and add chocolate chips. Cool slightly and frost bars.
